Butter and anhydrous milk fat

We produce a wide range of butter and anhydrous milk fats for our customers from the baking and confectionery industry – standardized or tailor made.


Milk fat fractions allow defined melting points

Using a purely physical process we can separate the hard stearins from the soft / liquid oleins after which we can recombine the individual fractions into a large range of new products. This method provides for defined melting points, defined degrees of hardness or specific melting behavior – thus the production of customized milk fats.


White milk fat for special needs

In another very special technological process, namely deodoration, we remove cholesterol and / or the color and typical butter flavour from the milk fat. The resulting product is ideal for the production of light crèmes, candies or filled chocolate or for further processing with nuts, brittle or flavourings where their aroma should be prevail.


Contract processing of butter and anhydrous milk fat

We are able to draw on an extensive technology portfolio to process milk fat. Automated production lines and sophisticated processes ensure consistent product quality. We use these resources not only for our own products, but also as a service provider in the contract manufacture sector for the processing of and for customers’ milk­based raw materials.

Own milk production

Uelzena has been producing milk powders for more than 60 years. The milk comes from (member) dairies from the region (Northern Germany) and is delivered directly to the factories in Uelzen and Neumünster. This means: short transport routes and secured raw material availability. Moreover, it guarantees quality because we know precisely where our milk has been produced.


High quality skimmed milk powder

Another factor that is key for us is the constant optimization of our milk powder range and properties including degree of denaturation, solubility, dust production, particle size and mixing behavior – this is because our customers have different individual requirements. Our gently heated and barely denatured Low Heat skimmed milk powder e.g. is perfectly suited for the recombination of milk and its further processing into yoghurt, cheese and fermented dairy products.

Sweet condensed milk

The Warmsener Spezialitäten GmbH is part of the Uelzena Group and incorporated in the business field Uelzena Ingredients. The manufacturing site Warmsen is specialized in the production of sweet condensed milk with various degrees of fat and dry matter content for the confectionery industry. On request, we adjust the level of fat and dry matter of our main product condensed milk to meet our customers’ individual requirements.


Milk products for fine food

They also provide the fine food industry with a number of cream and yoghurt products (also lactose free) for creating dips, sauces, desserts, gourmet salads, convenience food or fresh products from here.


Knowing the requirements for industrial production

More than standard only: Tailor made cream mixtures and customized compounds that are precisely aligned to further processing at our customers’ production plants complete our product range. We supply our products in hygienic packaging systems that meet industrial standards , such as sealed buckets, BIBs, pallecons or stainless steel containers.

Specialist in spray drying

One of our core competence is spray drying. For 40 years, we have been drying not only just milk, but many other sensitive products, too: vegetable dyes and flavors as well as vitamins, minerals, vegetable extracts, spices, additives, gelatin and collagen hydrolysates. Apart from normal aqueous solutions, we also process highly susceptible products, suspensions and emulsions into spray-dried ingredients.


Individual process development

One of our strengths is the development of perfectly adjusted processing techniques for each individual product. Depending on the product, we use different drying systems, nozzles and disks, to control the physical properties of the powders including particle size and dusting properties in a targeted fashion.


Excellent processing and quality control

Since we have a highly qualified analytical laboratory and sophisticated cleaning processes, we are able to guarantee a high degree of food safety for all of our contract drying products: They are free from microorganisms, allergens and contaminations, caused, for example, by cross contamination. Naturally, we have been certified – from ISO 9001 and organic to IFS, from kosher to halal, we have passed all relevant certifications.
